Very small anchovies, caught early spring in the upper Adriatic, immediately worked and put to rest under salt following a old recipe of the House. We recommend to taste them natural or seasoned with 12 grams of vinegar, 6 grams of garlic and 3 gr of parsley leaving marinate one day. To taste with warm bread and lemon butter
